April 2004, Claire Porter & Ian Waddle are offered jobs and are employed by Gordon Ramsay. (See Revisited Episode)
November 2004, Claire Porter (the bookshop chef) who was given a job by Gordon Ramsay at Angela Harnett’s Menu restaurant left just a few weeks after joining. Hartnett said “She (Clare) went due to personal problem.” More Info
November 2004, Ian Waddle who was also given a job by Gordon Ramsay at Gordon Ramsay at Claridge’s quit after just three weeks, as he was unhappy with its long-hours culture.
The Caterer & Hotel keepers publication reported:
“Ramsay told Waddle at the Glasshouse: “I can’t believe you’ve only been cooking for three months. You’re a f****** natural.” But, according to the Glasshouse’s owner Neil Farrell, Waddle hadn’t enjoyed Claridge’s and felt there was more to life than doing the same thing over and over again during a 19-hour day.” More Info
May 2008, I called and confirmed, Neil Farrell is still the owner of the glass house, Richard Collins is still the head chef. Both Ian Waddle and Claire Porter had returned to work at the Glass but both had left again.

Five years on the Glass House appears to be thriving, and it deserves to be. My wife and I visited Ambleside in August; the restaurant is in a great location near the high street. Service was cheery, knowledgable and fast and the food was absolutely top notch. Emphasis was on local ingredients and recipes; we could easily eat there several days a week.
